Fillet wrapped in bacon

Ingredients

  • 1
    whole beef fillet
  • 15
    ml
    wholegrain mustard
  • 4
    gherkins, finely chopped
  • 1
    small onion, finely chopped
  • 3
    ml
    garlic salt
  • 250
    g
    rindless streaky bacon
 

Method

35-40 minutes
 
1. Slit the fillet in half lengthwise without cutting right through. 2. Mix mustard, gherkins, onions and garlic salt together. Season with freshly ground black pepper. Spread inside the fillet. Close the meat and wrap bacon around it, securing each strip of bacon with a toothpick. 3. Braai over medium coals for 15 to 20 minutes on each side. Serve immediately.
