Fillet with coffee sauce

    kg
    beef fillet
  • 10
    ml
    crushed garlic
  • milled black pepper
  • salt
  • olive oil
  • parsley sprigs and peppercorns to garnish
  • SAUCE
  • 250
    ml
    cream
  • 5
    ml
    instant Nescafé coffee granules
  • 5
    ml
    whole green peppercorns or peppercorn paste
 

Method

 
Rub fillet with garlic, black pepper and salt, then rub with olive oil. Preheat oven to 200 ºC. Place fillet in a baking tray and roast until browned, 15 minutes. Remove from oven. Pour meat juices into a small saucepan and add cream, coffee granules and green peppercorns. Simmer until slightly thickened. Cut fillet into large medallions and top with coffee sauce. Sprinkle with parsley and peppercorns and serve.
