Fillet medallions with creamy mushroom sauce

    onions, chopped

    fresh mushrooms, sliced
  • 250
    g
    bacon, chopped
  • generous tot sherry
  • 125
    ml
    chutney
  • 250
    ml
    cream
  • 1
    springbok fillet, cut into medallions
  • salt and black pepper to taste
 

Method

 
Fry the onions, mushrooms and bacon in heated oil until browned and done. Add the sherry, chutney and cream and bring to the boil. Simmer for a few minutes. Season the medallions to taste with salt and pepper and fry in heated oil until golden brown. Serve with the mushroom sauce. Serves 4.
