Filled baked potatoes

    medium-sized potatoes
  • 15
    ml
    chopped chives
  • 60
    g
    smooth low-fat cottage cheese
  • 60
    ml
    plain low-fat yoghurt
  • 2
    ml
    paprika
  • salt
  • freshly ground white pepper
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Wash the potatoes thoroughly and prick them. Place the potatoes on a baking sheet and bake for 1 hour or until done. Alternatively, boil the potatoes in their jackets in boiling water until done. Cut a cross on the top of each potato using a sharp knife to open it up. Blend the remaining ingredients and spoon over each potato. Serves 6.
