    butter
  • 250
    ml
    sugar
  • 6
    large eggs
  • 30
    ml
    grated orange zest
  • 15
    ml
    baking powder
  • 750
    ml
    cake flour
  • 200
    ml
    fresh orange juice
  • 6
    preserved figs, coarsely chopped

Grease and line a 22cm round baking tin. Beat the butter until soft, then beat in the sugar until light. Add the eggs, one at a time, beating well after each addition.

Beat in the orange zest. Add the baking powder to the flour and then fold in the flour alternately with the orange juice. Lastly, fold in the figs. Spoon the batter into the tin.

Bake in a preheated oven for between one hour and one hour and 15 minutes, or until a skewer inserted comes out clean. Cool on a wire rack.
