Ingredients (12)

6.00 potatoes — large, peeled and cubed
30.00 ml masala
2.00 ml turmeric
100.00 ml oil
1.00 onion — chopped
5.00 ml garlic — cloves, crushed
5.00 ml fresh ginger — grated
5.00 tomatoes — chopped
2.00 green chillies — chopped
30.00 ml fresh coriander — chopped
5.00 curry leaves
5.00 ml salt — to taste

Method:

Sprinkle the potatoes with the masala and
turmeric. Heat the oil and sauté the onion
until golden brown. Add the garlic, ginger,
tomatoes and potatoes and cook until
the potatoes are tender. Add the chillies,
coriander and curry leaves and simmer
until the liquid has evaporated. Season
with salt.
