Fiery potatoes

    large potatoes, peeled and cubed

    masala

    turmeric
  • 100
    ml
    oil
  • 1
    onion, chopped
  • 5

    crushed garlic
  • 5
    ml
    grated ginger
  • 5
    tomatoes, chopped
  • 2
    green chillies, chopped (seeds optional)
  • 30
    ml
    chopped fresh coriander
  • 5
    curry leaves
  • 5
    ml
    salt to taste
 

Method

Sprinkle the potatoes with the masala and turmeric. Heat the oil and sauté the onion until golden brown. Add the garlic, ginger, tomatoes and potatoes and cook until the potatoes are tender. Add the chillies, coriander and curry leaves and simmer until the liquid has evaporated. Season with salt.
