Ingredients (11)

15.00 ml oil
1.00 onion — large, chopped
2.00 garlic — cloves, crushed
400.00 g tomatoes — chopped
250.00 ml stock — chicken
1.00 orange — zest and juice
15.00 ml honey
1.00 cinnamon — stick
2.00 ml allspice — ground
2.00 potatoes — peeled and sliced
30.00 ml fresh mint — chopped

Method:

Heat oil and sauté onion and garlic until soft. Add remaining ingredients, except potatoes and mint. Bring to the boil, then simmer for 30 minutes.
Remove cinnamon stick and blend in a processor until smooth. Season to taste. Warm potato slices and divide between 4 serving bowls. Spoon soup on top and garnish with chopped mint. Serves 4.
