Fez-style tomato soup

    oil
  • 1
    large onion, chopped
  • 2
    cloves garlic, crushed
  • 400
    g
    chopped tomatoes
  • 250
    ml
    chicken stock
  • 1
    orange (juice and grated rind)
  • 15
    ml
    honey
  • 1
    cinnamon stick
  • 2
    ml
    ground allspice
  • 2
    potatoes, boiled, peeled and sliced
  • 30
    ml
    freshly chopped mint
 

Method

Heat oil and sauté onion and garlic until soft. Add remaining ingredients, except potatoes and mint. Bring to the boil, then simmer for 30 minutes. Remove cinnamon stick and blend in a processor until smooth. Season to taste. Warm potato slices and divide between 4 serving bowls. Spoon soup on top and garnish with chopped mint. Serves 4.
