Fettuccine with tuna and anchovies

    olive oil
  • 4
    cloves garlic, peeled and crushed
  • 60

    fresh parsley, chopped
  • 50

    anchovies, chopped
  • 1
    small red chilli, finely chopped
  • 175

    tuna chunks, drained
  • 1
    lemon (juice only)
  • 500
    g
    fettuccine, cooked al dente
  • 125
    g
    butter
  • 250
    ml
    freshly grated Parmesan cheese
  • salt and freshly ground black pepper
 

Method

 
Heat olive oil in a large frying pan and add garlic and parsley. Cook for 1 minute. Add anchovies, chilli and tuna and heat through. Add lemon juice, then turn off the heat. Add fettuccine, butter and Parmesan cheese. Season and serve at once. Serves 4-6
