Fettuccine with tuna and anchovies

Ingredients (11)

30.00 ml fresh chillies — 573
4.00 garlic — cloves, peeled and crushed
60.00 ml fresh parsley — chopped
50.00 g anchovy fillets
1.00 red chilli — small, finely chopped
175.00 g tuna — tinned chunks, drained
1.00 lemon — juice only
500.00 g pasta — fettuccine, cooked al dente
125.00 g butter
250.00 ml parmesan cheese — freshly grated
sea salt and freshly ground black pepper

Method:

Heat olive oil in a large frying pan and add garlic and parsley. Cook for 1 minute. Add anchovies, chilli and tuna and heat through. Add lemon juice, then turn off the heat. Add fettuccine, butter and Parmesan cheese. Season and serve at once.
Serves 4-6
