Feta cheese with grilled tomatoes

  • few sprigs each fresh thyme and rosemary
  • 500
    g
    cherry tomatoes
  • 50
    ml
    olive oil
  • salt and freshly ground black pepper
  • 300
    g
    feta cheese
  • few thick slices fresh bread, lightly toasted
 

Method

 
Preheat the oven to 200 ºC. Spread the herbs in an ovenproof dish and arrange the tomatoes on top. Baste with olive oil and season generously with salt and freshly ground black pepper. Bake for about 15 minutes until the tomatoes have shrunk slightly. Remove and leave to cool. Grill the feta rounds under the oven grill till lightly browned. Serve with the tomatoes and drizzle with the seasoned hot olive oil in which the tomatoes were baked. Serve immediately. Serves 5-6.
