Ingredients (18)

2.00 bacon — rashers, chopped
100.00 g mushrooms — chopped
350.00 g pork mince
1.00 stock cube — beef
1.00 onion — small, grated
5.00 ml dried mixed herbs
30.00 ml tomato paste
100.00 g feta cheese — chopped
1.00 eggs — lightly beaten
1.00 eggs — whites only
375.00 ml breadcrumbs — stale
75.00 g ham — smoked, chopped
0.00 topping — TOPPING
50.00 g feta cheese — softened
15.00 ml sour cream
75.00 g ham — smoked, chopped
2.00 ml chillies — powder
30.00 ml breadcrumbs — stale

Method:

Cook bacon in a hot pan until lightly browned.
Add mushrooms and cook, stirring until mushrooms are soft, then drain.
Mix together mince, crumbled stock cube, onion, herbs, tomato paste, cheese, egg, egg white and breadcrumbs until well blended.
Transfer mixture to a bowl and add bacon mixture and ham.
Press mixture into a greased 8 cm x 26 cm loaf pan.
Bake uncovered at 180 °C for about 45 minutes, or until cooked through.
Allow to stand for 5 minutes, then drain away excess liquid and turn onto an oven tray.
Mix topping ingredients together in a bowl and spread over meat loaf.
Bake, uncovered at 200 °C for 10 minutes or until heated through.
Serve warm or cold with a salad.
