Ingredients (2)

quantity basic bread dough mixture, made with brown bread flour
100.00 g feta cheese — crumbled
50.00 ml fresh chives — finely chopped

Method:

Preheat the oven to 200 ºC (400 ºF), Grease a 22 x 13 x 6 cm loaf tin with margarine. Following the recipe until the dough has risen for the first time, prepare the basic dough. Add the cheese and chives and punch down. Divide the dough into three equal portions. Form each portion (as for rusks) and place in the prepared tin. Cover with clingwrap and leave in a warm place to rise until doubled in bulk. Remove the clingwrap, brush lightly with whisked egg and bake for 15 minutes in a hot oven. Reduce the heat to 180 ºC (350 ºF) and bake for a further 20-25 minutes or until done. Turn out onto a wire rack and cover with a clean cloth.
Makes a medium-sized loaf.
