Feta and pesto burgers with onion rings

    onion, finely chopped
  • 450
    g
    beef mince
  • 150
    g
    feta cheese, cut into small cubes
  • salt and freshly ground black pepper
  • 2
    eggs, beaten
  • oil for frying
  • 60
    ml
    pesto
  • 4
    slices farmhouse bread, toasted
  • lettuce, to serve
  • ONION RINGS
  • 4
    medium onions
  • flour, to dust
  • 3
    egg whites
  • 1
    egg yolk
  • oil, to fry
 

Method

 
Mix onion, beef, feta cheese, salt, pepper and eggs together and shape into 4 flat rounds.
Fry patties on both sides in hot oil until cooked through.
Spread some pesto on hot toast, and top with lettuce and a patty.
Serve with crisp onion rings.
ONION RINGS
Slice onions into thick rings, dust with flour and dip into egg whites whisked until light and fluffy.
Mix quickly with the egg yolk.
Deep-fry in hot oil until golden brown.
Drain on paper towels.
