Feta and chilli omelette

  • 2
    jumbo eggs - go for free range
  • 15
    ml
    milk
  • 2
    ml
    dried chilli flakes
  • salt and milled pepper
  • 15
    ml
    olive oil
  • half a disc 70 percent reduced-fat feta cheese (or use avocado or chopped tomato)
 

Method

 
Beat eggs, milk and chilli flakes together.
Heat olive oil in a non-stick pan.
Add egg mixture and cook, agitating from time to time with a fork.
When the egg is just set, scatter crumbled feta over one side of the omelette (and a bit of extra chilli if you like) and flip to create a half moon shape.
Serve immediately.
Cook's notes:
You could use finely sliced fresh chilli instead.
