Feta and avocado omelette

    eggs
  • 20
    ml
    water
  • 15
    ml
    chopped chives
  • 15
    ml
    butter
  • 1
    small avocado, peeled and diced
  • 30
    ml
    crumbled feta cheese
  • 12
    cherry tomatoes, halved
  • salt and milled black pepper to taste
 

Method

 
Beat eggs and water together until frothy. Add chives. Heat butter until bubbling. Add egg mixture. Cook, lifting sides frequently to allow egg mixture to run underneath. When cooked around edges but still wet in centre, place avocado, cheese and tomatoes on one half of omelette. Season to taste, flip unfilled side over filling and slide out of pan. Serve immediately with a mixed salad. TOTAL KILOJOULE COUNT: 2 420 kJ (580 Cal).
