Ingredients (8)

3.00 eggs
20.00 ml water
15.00 ml fresh chives — chopped
15.00 ml butter
1.00 avocado — diced
30.00 ml feta cheese — crumbled
12.00 cherry tomatoes — halved
salt and freshly ground black pepper — to taste

Method:

Beat eggs and water together until frothy. Add chives.
Heat butter until bubbling. Add egg mixture. Cook, lifting sides frequently to allow egg mixture to run underneath.
When cooked around edges but still wet in centre, place avocado, cheese and tomatoes on one half of omelette.
Season to taste, flip unfilled side over filling and slide out of pan. Serve immediately with a mixed salad.
