    kg
    1 leg of pork
  • Sunflower oil
  • Salt
  • 60
    g
    butter
  • Whole cloves
  • 45
    ml
    olive oil
  • 8
    small potatoes, cut into wedges
  • freshly ground black pepper
 

Method

Rub rind of pork generously with oil and salt. Score and stud with whole cloves. Place on a rack in a roasting pan and roast in oven at 200 degrees for 20 minutes. Reduce heat to 180º C and cook for a further for 45 minutes or until pork is cooked through. Turn off the oven and leave pork for 15 to 20 before removing and carving.

Sprinkle potato wedges with olive oil and roast in oven, until cooked, for +/- 20 minutes. Season with salt and freshly ground black pepper. Place pork on serving platter and surround with potato wedges.
