Festive kebabs

  • 4
    large turkey drumsticks
  • 500
    g
    wood-smoked Cape steaks or similar cured pork
  • BASTING MIX
  • 30
    ml
    wholegrain mustard
  • 30
    ml
    honey
  • salt and freshly ground black pepper
  • 30
    ml
    olive oil
  • 5
    ml
    origanum
  • 3
    cloves garlic
 

Method

 
1. Preheat the oven to 180 ºC. Remove the turkey from the bone, trying to keep it as neat as possible. Remove skin and cut meat into large chunky cubes. 2. Cut the Cape steaks into large cubes and thread on to wooden kebab sticks (presoaked in water) alternately with turkey. 3. Mix basting ingredients and brush on to kebabs. Roast in the oven for about 25 minutes on a grill rack or cook over the coals for about 12 minutes on each side. 4. Serve with a selection of salads and pocket pitta breads.
