Festive butter caramels

Ingredients

    butter
  • 30
    ml
    golden syrup
  • 300
    g
    sugar
  • 410
    g
    Nestlé condensed milk
  • 125
    ml
    water
  • 1
    ml
    cream of tartar
  • 5
    ml
    vanilla essence
  • 100
    g
    walnuts, chopped
  • 100
    g
    red cherries, chopped
  • 100
    g
    glacé fruit, chopped
 

Method

20 minutes
 
1. Place butter, syrup, sugar, condensed milk, water and cream of tartar in a heavy-based saucepan and cook over low heat for 20 minutes, stirring constantly. Mixture should be a caramel colour. To test if it's ready, drop a little of the mixture into cold water. It should form a firm, but pliable, ball. 2. Remove from heat and beat with a wooden spoon for 1 minute. Stir in the vanilla essence, nuts, cherries and glacé fruit. 3. Pour into a greased 15 cm square baking tin and leave to set. Cut into squares.
