Ingredients (10)

125.00 g butter
30.00 ml golden syrup
300.00 g sugar
410.00 g condensed milk
125.00 ml water
1.00 ml Cream of tartar
5.00 ml vanilla — essence
100.00 g walnuts — chopped
100.00 g cherries — chopped
100.00 g dried fruit mix

Method:

1. Place butter, syrup, sugar, condensed milk, water and cream of tartar in a heavy-based saucepan and cook over low heat for 20 minutes, stirring constantly. Mixture should be a caramel colour. To test if it’s ready, drop a little of the mixture into cold water. It should form a firm, but pliable, ball.
2. Remove from heat and beat with a wooden spoon for 1 minute. Stir in the vanilla essence, nuts, cherries and glacé fruit.
3. Pour into a greased 15 cm square baking tin and leave to set. Cut into squares.
