0.00 red onion — chopped
0.00 garlic — cloves, crushed
0.00 fresh ginger — minced
0.00 tomatoes — chopped
0.00 green chilli — halved
0.00 coconut milk — tin, lite
0.00 curry leaves
0.00 fresh coriander — chopped
0.00 fresh mint — handful, chopped
0.00 salt — to taste
0.00 fish — fillets

Method:

Heat oil in a medium-sized pot.
Add onion, garlic and ginger and sauté for three minutes.
Add tomatoes, chilli, coconut milk, curry leaves and herbs.
Simmer until you have a rich gravy, about 15 to 20 minutes.
Season to taste.
Add fish and simmer until just cooked.
Serve with basmati rice.
