Ingredients (12)

800.00 g tomatoes — diced, drained
30.00 ml sugar
5.00 ml dried chilli flakes
1.00 onion — diced
24.00 olives — black, pitted
60.00 ml fresh chillies — 573
1.00 lemon — small, zest only
fresh basil — handful
600.00 g calamari — tubes, sliced
BRUSCHETTA
4.00 bread — thick, country-style,
garlic — cloves, crushed

Method:

Combine canned tomatoes, sugar, chilli flakes, onion, olives, olive oil, lemon peel and basil in a saucepan and cook over moderate heat for about 30 minutes, or until thickened and very little liquid remains.
Add calamari and cook for 2 to 3 minutes, or until calamari is opaque (do not cook for longer, or the calamari will be tough). Cool.
BRUSCHETTA: Brush bread with crushed garlic and olive oil and toast on both sides. Serve with calamari.
