Ingredients (11)

1.00 papaya — large, chopped
500.00 g sugar
125.00 ml water
OATY BISCUITS:
210 g oatmeal
100 g flour — wholewheat
100 g flour — cake
15 g sugar
2 ml salt
2 ml Baking powder
210 g butter — cut into small cubes
4 eggs — white

Method:

PAWPAW PRESERVE: Place sugar and water in a saucepan and bring to the boil. Simmer for 15 minutes or until thick and syrupy. Add fruit and allow to cool. Place in a sterilised jar.

OATY BISCUITS: Mix dry ingredients in a food processor, add the butter and continue to mix until it resembles fine breadcrumbs. Add egg whites and mix until it forms a smooth ball. Wrap in clingwrap and chill for two hours.

Preheat oven to 180 ºC.

Place dough on a floured board and roll out thinly. Cut out shapes with a star cookie cutter. Place on a greased baking tray and bake for 15 minutes, or until golden brown. Remove and place on a cooling rack. Store in an airtight container. Serve with pawpaw preserve and a strong farmhouse cheddar.
