Farm-style green beans

    rashers rindless streaky bacon, diced
  • 375
    ml
    water
  • 1
    clove garlic, crushed
  • red chilli, chopped
  • 1
    medium onion, chopped
  • 2
    medium potatoes, cubed
  • 500
    g
    green beans, sliced thinly on the diagonal
  • 15
    ml
    butter
  • chopped parsley
  • salt and milled black pepper to taste
 

Method

 
Simmer bacon in water with garlic, chilli, onion and potatoes for 10 minutes. Add beans. Cook for 12 minutes, until beans are just tender. Add butter, parsley, salt and pepper and mash lightly with a fork so that broken potato binds mixture.
