Ingredients (16)

2.00 kg boer pumpkin
25.00 ml oil
2.00 onion — sliced
2.00 garlic — cloves, finely chopped
500.00 g mince
250.00 ml stock — beef
1.00 ml nutmeg — ground
cloves — ground, pinch
pimento seeds — ground
freshly ground black pepper
25.00 ml butter
2.00 cinnamon — stick
15.00 ml brown sugar
25.00 ml fresh parsley — finely chopped
500.00 ml rice — cooked
salt

Method:

Slice top off the pumpkin and remove pips. Scoop out pumpkin flesh and dice.
Heat the oil in a pan and sauté onion and garlic until soft.
Add the minced meat, little by little, and fry until browned.
Add 100 ml beef stock and season with nutmeg, ground cloves, pimento and pepper to taste.
Sauté the pumpkin in butter until pale brown. Add the cinnamon, brown sugar and remaining beef stock and boil until soft, but not mushy.
Combine with the minced meat and add the parsley and rice.
Season to taste with salt if necessary.
If desired, spoon into the hollowed out pumpkin shell and serve.
