    whole boer pumpkin

    oil

    onions, sliced
  • 2
    cloves garlic, finely chopped

    minced meat
  • 250
    ml
    beef stock
  • 1
    ml
    nutmeg
  • pinch ground cloves
  • pinch pimento
  • pepper
  • 25

    butter
  • 2
    sticks cinnamon
  • 15

    brown sugar
  • 25
    ml
    parsley, finely chopped
  • 500
    ml
    cooked rice
  • salt
 

Method

 
Slice top off the pumpkin and remove pips. Scoop out pumpkin flesh and dice. Heat the oil in a pan and sauté onion and garlic until soft. Add the minced meat, little by little, and fry until browned. Add 100 ml beef stock and season with nutmeg, ground cloves, pimento and pepper to taste. Sauté the pumpkin in butter until pale brown. Add the cinnamon, brown sugar and remaining beef stock and boil until soft, but not mushy. Combine with the minced meat and add the parsley and rice. Season to taste with salt if necessary. If desired, spoon into the hollowed out pumpkin shell and serve.
