Ingredients (16)

8.00 chicken — pieces
15.00 ml oil
2.00 onions — large, chopped
4.00 garlic — cloves, crushed
5.00 cm fresh ginger — grated
5.00 ml cumin — ground
5.00 ml turmeric
5.00 ml coriander — ground
5.00 ml cayenne pepper
400.00 g tinned tomatoes — whole peeled, drained
150.00 ml yoghurt — plain
15.00 ml fresh coriander — chopped
15.00 ml garam masala — or mild curry powder
sea salt and freshly ground black pepper
lemon — juice only
15.00 ml fresh coriander

Method:

Spray a pan with non-stick spray and fry the chicken pieces until golden brown. Remove from the pan and set aside.
Wipe the pan, return to the heat and add the oil once the pan is hot. Stir-fry the onion, garlic and ginger until tender. Reduce the heat and add the cumin, turmeric, coriander and cayenne pepper along with a tablespoon of water and stir-fry for another 2 minutes.
Add the tomatoes, yoghurt and half the fresh coriander. Reduce the heat and add the chicken and about 65 ml (1/4 c) water. Sprinkle with garam masala and simmer for about 30 minutes or until the chicken is tender and done. Season with salt and pepper if necessary. Chop the remaining leaves just before serving and sprinkle on top.
Serve with rice.
Serves 6-8.
