Ingredients (11)

FILLING
125.00 g bacon
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
peppercorns — black
250.00 ml cream
30.00 ml fresh parsley — chopped
salt and freshly ground black pepper — to taste
800.00 g beef fillet — whole
125.00 g feta cheese — crumbled
BASTING MIXTURE
50.00 ml oil
25.00 ml lemon juice

Method:

Preheat the oven to 160 ºC (325 ºF). Fry the bacon until done, but not crisp. Remove from the pan and chop finely. Sauté the onion and garlic in the oil in the pan until the onion is soft. Add a few peppercorns. Add the cream and boil rapidly until the sauce has reduced by half. Stir frequently. Season with parsley, salt and black pepper to taste. Cool the mixture completely.
Make an incision along the length of the fillet, but do no cut right through. Open it and flatten slightly with the palm of your hand. Spoon the filling (reserve the sauce) onto one half of the fillet, close and secure with pieces of string at 25 mm spacing. Place the fillet on the rack of an oven roasting tin and bake for about 15-20 minutes per 500 g plus 15 minutes for rare, or 20-25 minutes per 500 g plus 20 minutes extra for medium rare.
Baste the meat continuously with the basting mixture. Leave the fillet in the warming drawer before slicing. Slice in 2 cm slices, sprinkle with feta cheese and grill until the cheese has slightly browned. Serve with the remaining sauce and baked potatoes and vegetables.
