    g
    margarine
  • 300
    ml
    castor sugar
  • 500
    ml
    flour
  • 250
    ml
    cornflour
  • 250
    ml
    custard powder
  • 2
    ml
    salt
  • 5
    ml
    baking powder
  • 2
    eggs
  • 5
    ml
    vanilla essence
 

Method

 
1. Cream margarine and sugar until light and fluffy. Add eggs and vanilla essence. Beat well. 2. Sift together the dry ingredients and add to creamed mixture. If mixture does not bind easily, work it with your hands. DO NOT ADD LIQUID. 3. Pipe rosettes of dough onto a greased baking sheet, or form small balls of dough in your hands and press flat with a fork or the top of an empty cotton reel. 4. Bake in the centre of the oven at 200 ºC for 10 to 15 minutes, until golden. Remove from pan and cool. 5. Pipe a rosette of brandy lemon icing (see recipe) in the centre of each biscuit for extra special occasions.
