Exotic spinach and prawn

    frozen prawns, defrosted
  • 300
    g
    spinach
  • 2
    pizza bases (see recipe for basic pizza dough)
  • 25
    ml
    basil pesto
  • 150
    ml
    tomato and garlic paste (see recipe)
  • 200
    g
    mozzarella, grated
 

Method

15-20 minutes
 
1. Remove prawns from shells and dry with a kitchen towel. Cook spinach, squeeze out excess water and chop coarsely. 2. Spread prepared pizza bases with basil pesto and tomato and garlic paste. 3. Spread spinach evenly over the bases and top with prawns. Sprinkle mozzarella over the top. 4. Bake in a preheated oven at 200 ºC for 15 to 20 minutes. Makes two 32 cm pizzas.
