Exotic fruit salad

  • 3
    oranges
  • 2
    red grapefruit
  • 1
    pawpaw
  • 1
    mango
  • 1
    pineapple
  • 3
    kiwi fruit
  • 6
    litchis
  • 3
    pears
  • slivered mint or lemon balm
 

Method

5-10 minutes
 
Prepare the fruit. Peel 1 orange and slice all oranges thinly. Peel and segment grapefruit. Peel, seed and slice pawpaw thinly. Remove stone from mango and dice flesh. Peel and core pineapple, then slice flesh thinly. Peel and slice kiwi fruit thinly. Remove stones from litchis (or use canned litchis). Peel, halve and core pears and poach in syrup (see fragrant syrup recipe) for 5 to 10 minutes. Either arrange fruit in a shallow bowl, pour the remaining syrup over and chill; OR pack fruit separately in small containers, cover with syrup and chill until needed. Arrange in a shallow bowl just before use and pour syrup over. (I prefer the latter method.) Decorate with slivered mint or lemon balm.
