Ethiopian pepper pot

    stewing beef, cubed

    medium onions, sliced
  • 3
    cloves garlic, crushed
  • 1
    Litres
    beef or chicken stock
  • 4
    chillies, sliced (or more to taste)
  • 120
    g
    tomato paste
  • 5
    ml
    salt
  • 60
    ml
    paprika
 

Method

1 hour
 
Heat the oil in a large saucepan. Brown the meat over a high heat, then add the onions and garlic and continue to cook until onions are soft. Add the remaining ingredients, bring to the boil, then reduce to simmer. Simmer gently for 30 to 45 minutes until meat is tender. Serve with rolls or crusty bread.
