Ingredients

  • MEAT FILLING
  • 10
    ml
    sunflower oil
  • 1
    beef sausage, sliced
  • 2
    bacon rashers, chopped
  • 0.50
    onion, chopped
  • 1
    tomato, diced
  • 0.50
    green pepper, sliced
  • 1
    handful of chopped fresh mushrooms
  • 2
    ml
    (or more to taste) barbecue spice
  • salt and pepper to taste
  • OMELETTE
  • 2
    large eggs, lightly beaten
  • 2
    ml
    baking powder (optional)
  • 10
    ml
    cold water
  • 5
    ml
    chopped fresh parsley
 

Method

10 to 15 mins
 
Prepare the meat filling and set aside.
MEAT FILLING
Heat the sunflower oil in a frying pan and add the beef sausage, bacon, onion, tomato, green pepper and mushrooms.
Fry for a few minutes, stirring occasionally. Add barbecue sauce and season to taste.
OMELETTE
Whisk the omelette ingredients together.
Coat a frying pan with oil and pour omelette ingredients into the pan.
When cooked underneath, but still wet on top, spoon filling onto half of the omelette.
Fold over, then slide onto a serving plate.
