Ingredients

    ml
    prepared tea
  • 500
    g
    fruitcake mix
  • 200
    g
    soft brown sugar
  • 2
    large eggs
  • 300
    g
    self-raising flour
  • 15
    ml
    brandy
  • 7
    ml
    salt
  • 2
    ml
    ground cinnamon
 

Method

Allow the prepared tea to cool. Once cold, pour into a large bowl. Add the fruit and sugar and allow to stand overnight. Mix the remaining ingredients into the fruit mixture and pour into a greased, lined loaf tin or round, deep cake tin. Bake in a preheated oven at 160 ºC for 90 minutes, until a skewer inserted in the centre comes out clean. Cool slightly before removing from the tin. Cool on a wire rack and serve slices plain or spread with butter. Makes 1 loaf.
