Ingredients (8)

250.00 ml tea
500.00 g fruitcake mix
200.00 g brown sugar — soft
2.00 eggs — large
300.00 g flour — self-raising
15.00 ml brandy
7.00 ml salt
2.00 ml cinnamon — ground

Method:

Allow the prepared tea to cool. Once cold, pour into a large bowl. Add the fruit and sugar and allow to stand overnight.
Mix the remaining ingredients into the fruit mixture and pour into a greased, lined loaf tin or round, deep cake tin. Bake in a preheated oven at 160 ºC for 90 minutes, until a skewer inserted in the centre comes out clean. Cool slightly before removing from the tin. Cool on a wire rack and serve slices plain or spread with butter. Makes 1 loaf.
