English fried fish

  • 150
    g
    cake flour
  • 40
    g
    cornflour
  • 7
    ml
    baking powder
  • 250
    ml
    water
  • salt, freshly ground black pepper and paprika
  • 750
    g
    hake fillets or loins
  • seasoned flour
  • oil for frying
 

Method

 
Sift cake flour, cornflour and baking powder together.
Add water and seasonings to taste, mix and leave to stand for 30 minutes before using.
Heat oil for deep-frying. Coat fish in seasoned flour.
Dip fish into batter, allowing the excess to run off.
Fry in hot oil until golden.
Drain on absorbent paper before serving with freshly fried chips.
