Ingredients (9)

20.00 white bread — thinly sliced
Filling 1:cream cheese
125.00 ml pecan nuts — toasted, chopped
15.00 ml fresh parsley — chopped
15.00 ml onion — finely chopped
5.00 ml lemon juice
Filling 2:mashed hardboiled eggs
125.00 ml mayonnaise
15.00 ml fresh parsley — chopped
Filling 3: English cucumber
1.00 handfull rocket — leaves
Filling 4: smooth cream cheese
50.00 ml pesto — red pepper

Method:

Use thin slices of fresh white or brown bread. Spread each slice with soft butter and a filling of your choice.

Sandwich two slices of bread together. Cut off the crusts using a sharp serrated knife, before cutting the sandwich into triangles or squares.

Cover with clingfilm until just before your guests
arrive, to prevent the sandwiches from drying out.


Fillings

Filling 1
Toasted pecan nuts and cream cheese Mix one tub
cream cheese, 125ml finely chopped toasted pecan nuts,
15ml finely chopped parsley, 15ml finely chopped onion
and 5ml lemon juice. Season to taste.

Filling 2

Egg salad Mix eight mashed hardboiled eggs, 125ml
good-quality mayonnaise and 15ml chopped parsley.
Season to taste.

Filling 3

Cucumber Slice half an English cucumber into thin slices. Top
with rocket leaves and season to taste.

Filling 4

Red-pepper pesto Mix 250ml smooth cream cheese and 50ml
red-pepper pesto. Top with baby spinach leaves (optional).
