Ingredients (7)

2.00 eggs — hard-boiled, shelled
2.00 bread — sliced, toasted, buttered
75.00 g cheddar cheese — white, grated
1.00 eggs — lightly beaten
2.00 ml mustard — powder
freshly ground black pepper — to taste
30.00 ml fresh parsley — chopped

Method:

Slice the eggs thinly in rings and arrange on the buttered side of the slices of toast. Season lightly with salt.
Mix the remaining ingredients together, divide in half and spoon on to each slice of toast. Place under the oven grill or in the microwave oven until the cheese has just melted. Serve hot. Serves 2.
