Egg pizza with chilli oil drizzle

    spinach, washed and chopped

    Parma ham slices

    asparagus spears
  • 8
    large eggs
  • Parmesan shavings for garnishing
  • chilli oil for drizzling
 

Method

 
Preheat oven to 180 ºC. Place flour and salt in a large mixing bowl, add water and mix to a firm dough. Roll into 4 balls. Roll out into 15 cm rounds on a floured surface. Place on well-greased baking sheets. TOPPING: Brush pizza bases with olive oil. Arrange well dried spinach on top, shaping into nests to accommodate the eggs. Arrange Parma ham and asparagus on top. Break 2 eggs carefully into spinach nests on each pizza base, taking care not to let whites run out, and bake for 20 to 30 minutes, or until bases are golden and egg topping has set. Garnish each pizza with Parmesan shavings and drizzle chilli oil over.
