Egg mayonnaise on crispbreads

Ingredients (8)

2 eggs — hard-boiled
1 Tbs mayonnaise
sea salt and freshly ground black pepper
4 crispbread
1/2 cup popcorn kernels
7 cherry tomatoes
155 ml yoghurt — Greek
250 ml water

Method:

Peel the eggs and place in a bowl, gently mash with a fork, add the mayonnaise and season, stir well to combine. Spoon onto the Ryvita.

Wrap in sandwich wrap, place in lunch box with separately packed popcorn, cherry tomatoes and yoghurt. Pack with a bottle of water.
