Egg fried rice

Ingredients

  • 1
    Tbs
    Thai Trinity finely chooped garlic
  • 1
    Tbs
    Thai Trinity finely chopped ginger
  • 1
    Tbs
    Thai Trinity finely chopped chilli
  • 1
    onion finely chopped
  • 1
    carrot finely chopped
  • cooked basmati rice
  • 5
    eggs
  • 2
    Tbs
    brown sugar
  • 2
    Tbs
    soy sauce
  • chopped basil or spring onion
 

Method

10 mins
 
Pre-heat the basmati rice in the microwave.
Beat the eggs and set aside.
Heat the wok, until smoking.
Add enough sunflower or peanut oil to cover the bottom.
Add garlic, chilli and ginger and fry fro 1 minute.
Add the onion and carrot and stir fry for 3 miuntes.
Add a dash of Xiaoshing rice wine, sugar and soy sauce.
Add the beaten egg and stir for 1 minute. Making a sort of scrambled egg.
Tip in the rice and stir well.
Add chopped basil or spring onion and serve.
