Egg-free fluffy flapjacks

Ingredients

  • 375
    ml
    flour
  • 20
    ml
    baking powder
  • 15
    ml
    sugar
  • 335
    ml
    milk
  • 5
    ml
    white vinegar
  • 60
    ml
    melted butter
  • sunflower oil, for frying
  • cream or cream cheese, honey and cinnamon, to serve
 

Method

10 min - 15 min
 
Sift the dry ingredients together with 5ml salt in a large bowl.
Mix the milk, vinegar and melted butter in a separate bowl.
Mix the wet and dry ingredients until well combined. Cook immediately.

Heat a thin layer of oil in a non-stick frying pan over a medium heat.
Drop spoonfuls of the mixture into the frying pan. Flip when the bottom is golden brown. Cook the other side. Remove from the heat and set aside to cool.
Top with a spoonful of cream cheese or thick cream, drizzle with honey and sprinkle with cinnamon.
