  • 500
    ml
    milk
  • 2
    eggs
  • 100
    g
    sugar
  • 40
    ml
    cake flour
  • 40
    ml
    custard powder
  • 5
    ml
    vanilla essence
  • 50
    ml
    thick cream
 

Method

+/- 15 min
 
Heat the milk to just under boiling point. Whisk the eggs, sugar, cake flour and custard powder together, ensuring that all the lumps have been removed. Add a little of the hot milk and stir well. Add the egg mixture to the remaining hot milk and mix well. Heat slowly while stirring continuously, till the mixture thickens. Cool before adding the vanilla essence and cream. Enough for 50 tartlet shells.
