Egg and rice bites

    cooked white rice

    hard-boiled eggs, finely chopped

    fresh breadcrumbs
  • 50

    Cheddar cheese, grated
  • 45

    finely chopped parsley

    ml
    masala or curry powder
  • 5
    ml
    salt
  • 1
    egg, separated
  • cake flour
  • 50
    ml
    dried breadcrumbs
  • 75
    ml
    oil
 

Method

 
Place the cooked rice, finely chopped eggs, fresh breadcrumbs, Cheddar cheese, parsley and masala in a large dish and mix lightly. Add the salt and egg yolk and mix well. Dust your hands lightly with cake flour and roll small quantities of the mixture at a time into balls. Brush each ball with a little of the lightly beaten egg white before rolling in the dried breadcrumbs. Heat the oil in a pan and fry the balls for 6-8 minutes until golden brown. Serve hot or cold. Makes about 20 balls.
