100.00 ml rice — white, cooked
6.00 eggs — hard-boiled, finely chopped
60.00 ml breadcrumbs — fresh
50.00 g cheddar cheese — grated
45.00 ml fresh parsley — chopped
5.00 ml curry powder
5.00 ml salt
1.00 eggs — separated
flour — cake
50.00 ml breadcrumbs — dried
75.00 ml oil

Method:

Place the cooked rice, finely chopped eggs, fresh breadcrumbs, Cheddar cheese, parsley and masala in a large dish and mix lightly. Add the salt and egg yolk and mix well. Dust your hands lightly with cake flour and roll small quantities of the mixture at a time into balls. Brush each ball with a little of the lightly beaten egg white before rolling in the dried breadcrumbs. Heat the oil in a pan and fry the balls for 6-8 minutes until golden brown. Serve hot or cold.
Makes about 20 balls.
