Egg and poppy seed salad

  • 10
    hard-boiled eggs
  • 1
    bunch celery, sliced
  • 1
    onion, sliced into rings
  • 15
    ml
    capers
  • 45
    ml
    poppy seeds
  • SALAD DRESSING
  • 125
    ml
    mayonnaise
  • 125
    ml
    plain yoghurt
  • 65
    ml
    chutney
  • 15
    ml
    lemon juice
  • 5
    ml
    paprika
  • salt and freshly ground black pepper
 

Method

 
Shell the eggs and slice into rings, quarters or wedges. Arrange the egg slices, celery and onion on a pretty serving platter and sprinkle the capers and poppy seeds on top. Blend all the ingredients for the dressing. Chill until needed. Serve the dressing with the salad. Serves 6.
