Ingredients (8)

2.00 eggs — extra-large, seperated
100.00 ml castor sugar
250.00 g cottage cheese — creamed
250.00 ml yoghurt — natural
5.00 ml vanilla — essence
200.00 ml nescafé strong black coffee — cooled
20.00 ml sherry
250.00 g sponge finger biscuits

Method:

Spray a 22 x 23 cm square baking tray with non-stick cooking spray. Beat the yolks with castor sugar until light and mix in the cottage cheese, yoghurt and vanilla essence. Beat the egg whites until they form soft peaks. Mix the coffee and sherry. Dip the boudoir biscuits in the coffee mixture and place a first layer in the dish. Scoop over some of the cottage cheese mixture and put down a second layer of biscuits. Repeat until the mixture and biscuits are used up, ending with a layer of the mixture. Cool in the fridge until firm, preferably overnight. Sprinkle with cocoa or grated chocolate.
Makes 6-8 servings.
