Economical tiramisu

    extra-large eggs, separated

    castor sugar
  • 250
    g
    creamed cottage cheese
  • 250
    ml
    natural yoghurt
  • 5
    ml
    vanilla essence
  • 200
    ml
    strong black Nescafé coffee, cooled
  • 20
    ml
    sherry
  • 250
    g
    boudoir biscuits
 

Method

 
Spray a 22 x 23 cm square baking tray with non-stick cooking spray. Beat the yolks with castor sugar until light and mix in the cottage cheese, yoghurt and vanilla essence. Beat the egg whites until they form soft peaks. Mix the coffee and sherry. Dip the boudoir biscuits in the coffee mixture and place a first layer in the dish. Scoop over some of the cottage cheese mixture and put down a second layer of biscuits. Repeat until the mixture and biscuits are used up, ending with a layer of the mixture. Cool in the fridge until firm, preferably overnight. Sprinkle with cocoa or grated chocolate. Makes 6-8 servings.
