Economical chocolate bread pudding

    milk
  • 6
    slices of bread - cubed
  • 125
    ml
    sugar
  • 85
    ml
    cocoa
  • 2
    egg yolks - lightly beaten
  • 30
    ml
    softened butter
  • 5
    ml
    vanilla extract/essence
  • 2
    egg whites - beaten to stiff peaks

Preheat your oven to 180°C and grease a 20cm (8 inch) square oven-proof dish. Put the milk into a saucepan and bring to the boil, remove from heat

Add the bread cubes and whisk until quite smooth. Add sugar, cocoa and yolks, mix well.

Add butter and vanilla then fold in the egg whites. Pour into the dish and place in a bain-marie. Bake for 30 minutes or until firm to the touch.

Serve with custard, cream or ice cream.
