Economical casserole dish

    white sauce pre-mix (see recipe)

    water

    Cheddar cheese, grated

    large onions, finely chopped
  • 50

    butter
  • 4
    tomatoes, skinned and finely chopped

    sugar
  • salt and pepper
  • 500
    ml
    cooked rice or noodles
  • 400

    cooked chicken or fish, diced
  • 45

    dry breadcrumbs
 

Method

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Prepare a white sauce using the white sauce pre-mix and water, as described. Add half the Cheddar cheese to the sauce. Sauté the onion in the butter until soft. Add the tomatoes and simmer until a purée forms. Season with sugar and salt and pepper to taste. Arrange layers of noodles, chicken and tomato purée in the prepared dish and pour over the white sauce. Combine the remaining Cheddar cheese and breadcrumbs and sprinkle on top. Bake for about 30 minutes until the dish is heated through and the cheese has melted. Serve with a salad. Serves 4-6.
