Preheat oven to 175°C and grease a muffin tray, or use paper cupcake holders.
Place all the ingredients in a bowl. Beat for 3 minutes on high using an electric beater.
Spoon the batter into the cupcake holders. Bake for 25 minutes or until risen and golden brown. Allow to cool.
