Easy-to-make lemon cake

Ingredients

  • 1.5
    cup
    cake flour
  • 2
    tsp
    baking powder
  • 1/4
    tsp
    salt
  • 1
    cup
    castor sugar
  • 125
    g
    softened butter
  • 2
    eggs - at room temperature
  • 1/3
    cup
    milk
  • 1.5
    Tbs
    fresh lemon juice
  • 1
    tsp
    grated lemon zest
 

Method

Heat your oven to 160°C and grease or spray a loaf tin or line with baking paper.

Put all the above ingredients into a bowl and mix with an electric mixer on high for 3 minutes, if you think the batter is too stiff you can add a little more milk.

Spoon into the loaf tin and bake for 45 minutes or until risen and golden.

Allow to cool and ice as you desire. One idea is to mix a little icing sugar with some more lemon juice and drizzle it over the cake, topping with a little more lemon zest for garnish.
