Easy mince pie

    lean mince

    onion, finely chopped
  • 2
    garlic cloves, finely chopped
  • 1
    celery stalk, finely chopped
  • 1
    carrot, grated
  • 10
    ml
    curry powder
  • 15
    ml
    cake flour
  • 30
    ml
    tomato purée
  • TOPPING
  • 250
    ml
    plain yoghurt
  • 2
    extra-large eggs, lightly whisked
  • 50
    ml
    cake flour
  • 50
    ml
    finely grated Cheddar cheese
  • salt and freshly ground black pepper
 

Method

 
Preheat the oven to 160 °C and grease a 26 cm ovenproof dish.
Filling
Heat the oil and fry the mince and onion until done.
Add the garlic, celery, carrot and curry powder and sauté until the vegetables are soft.
Blend the cake flour and tomato purée and stir into the meat mixture.
Turn the meat mixture into the prepared dish.
Topping
Mix the yoghurt, eggs and cake flour together.
Stir in the cheese, salt and pepper and spoon over the meat mixture.
Bake for 30 minutes or until the topping is firm and golden brown.
