1.00 bread — white bread
750.00 ml sugar
375.00 ml water
250.00 ml cocoa powder
30.00 ml butter
5.00 ml vanilla — essence
750.00 ml coconut

Method:

Slice the bread into 3 cm thick slices and remove the crusts. Cut each slice into 3 cm cubes. Store in an airtight container.
Mix the rest of the ingredients, except the vanilla essence and coconut, in a saucepan and heat over moderate heat until the sugar dissolves. Bring to the boil and boil for 1 minute. Remove from the heat and add the vanilla essence. Dip the bread cubes in the chocolate syrup mixture and roll in the coconut. Cool on a wire rack and store in airtight containers.
Makes 40 hedgehogs.
