Easy chicken pie

    butter
  • 50
    ml
    cake flour

    milk
  • salt and freshly ground black pepper

    mixed herbs
  • 400

    curried chicken and vegetables
  • 420

    cream-style sweetcorn
  • 500
    g
    frozen mixed vegetables
  • breadcrumbs, toasted
 

Method

20-30 mins
 
Preheat the oven to 180ºC (350ºF). Spray an ovenproof dish with non-stick spray. Prepare a white sauce: melt the butter in a saucepan and add the cake flour. Stir well until smooth. Add small quantities of the milk while stirring continuously. Season with salt and pepper, add herbs and simmer until the mixture has thickened. Remove from the heat and add the chicken and vegetable mixture and sweetcorn. Pour boiling water over the frozen vegetables and drain well. Add to the chicken mixture and turn into the prepared oven dish. Sprinkle with toasted breadcrumbs and bake for 20-30 minutes or until brown on top. Serve with a salad. Serves 6-8.
