Ingredients (7)

2 digestive biscuits
10 g butter — soft
1 tsp golden syrup — or maple syrup
lemon — zest and juice
100 g mascarpone cheese — or cream cheese
1 Tbs icing sugar
fruit — or fruit coulis

Method:

Crush the biscuits and mix with the soft
butter and syrup. Spoon the mixture into one small metal food stacking
ring and press the mix on the bottom of the mould.
Fold the lemon juice, zest and icing sugar into the cheese, being sure
not to over mix, as this will cause the mixture to split. Spoon
the  cream cheese mix into the ring and use a palette knife to press
the mix well into the mould. This is important to avoid air gaps. At
this stage you can leave it in the fridge until you are ready to serve.
Remove the ring with a hot cloth or blowtorch. Place the cheesecake
on a serving plate and decorate with fresh berries, fruit or pour a
fruit coulis over the top.
