Easy apple strudel

apples — stewed
sugar
sultanas — sultanas
almonds — flaked
lemon — zest only
cinnamon — ground
phyllo pastry
milk — fat free
macadamia oil — walnut or sunflower oil
pronutro — whole wheat, apple bake or orginal
icing sugar

Method:

1. Preheat the oven to 180 °C. Lightly grease a large baking tray with non-stick cooking spray.

2. In the mixing bowl, combine the stewed or pie apples, sugar, sultanas, almonds, grated lemon rind and cinnamon, and mix well. Set aside.
3. Brush each sheet of phyllo pastry with milk. Place the sheets on top of each other on the lightly greased baking tray. Brush the last sheet with one teaspoon of the oil and then sprinkle the Pronutro in a thick layer evenly over the pastry.
4. Spoon the apple mixture evenly over the pastry sheet.
5. Roll up the strudel like a Swiss roll, pinching in the ends to make sure the pastry is sealed. Carefully shape into a crescent, without splitting the pastry.
6. Brush the strudel with the other teaspoon of oil.
7.Bake for 25 minutes, or until lightly browned and crisp.
8. Remove the strudel from the oven and leave it to cool on the baking tray.
9. When cooled, transfer the strudel to a serving platter, dust with icing sugar and cut into 10 slices.
